Wouldn't it be wonderful to simply go for a walk in the garden in the morning, harvest what's full of juice and vigour and use it to prepare a meal? That's exactly the idea behind the vegetarian restaurant Oz. An ode to vegetables and spontaneity, orchestrated by chef Simeon Nikolov.
Our latest gastronomic baby is at home in Remisa, right next to the castle. Its name, Oz, is derived from the Rhaeto-Romanic word for ‘today’ and expresses what is at the centre here: high-quality, contemporary cuisine that revolves around vegetables from our permaculture garden and the fields of our long-standing partners. In Oz, which seats a maximum of twelve people, guests sit at a long counter, watch the kitchen team at work and enjoy what is gradually being created before their eyes. The intimate setting of the restaurant allows Simeon Nikolov to honour the magic of the moment and spontaneously decide each day anew where the culinary journey should go.
