Fundaziun Uccelin

In order to guarantee sustainable quality in top gastronomy, it is necessary to promote talent in a targeted manner.

Uccelin means little bird in Romansh. And because the name of our foundation for the promotion of young gastronomic talent is the programme, it is designed to help the scholarship holders fly in their profession. With the help of a unique network of restaurants and producers, for which we are incredibly grateful.

In order for there to be exciting gastronomy in the future, we need people who are wholeheartedly committed to their profession. Finding, motivating and training these people is the aim of Fundaziun Uccelin, which was founded in 2016. Young talents who successfully apply for one of around 12 places each year are given access to a large number of exceptional companies in Switzerland and abroad for 20 weeks. They can be introduced to the art of cheesemaking and refining, study the principles of Nordic cuisine in Scandinavia or get to know plants in Peru that they have never seen before. And of course they also feel the pulse of Schloss Schauenstein, whether in service or in the kitchen.
